Coconut, Lime, Cilantro Cauliflower Rice

Cauliflower rice isn’t one of those things that you really need a recipe for. It’s pretty simple, really: buy pre-crumbled cauliflower (or rice your own in the food processor, if you’re feeling inspired), sauté in oil on the stove top, spice it up, and boom - you’re done.

But this cauliflower rice has a different dimension to it - the creamy and rich coconut milk add so much depth and flavor.

Cauliflower is one of the most versatile vegetables and one of my favorites because it's easy to eat in so many ways and it offers so many benefits. Like all cruciferous vegetables, cauliflower is high in glucosinolates and sulfur compounds which support detoxification, hormone balance and liver health.

Ingredients

  • 1 small head of cauliflower, cut into florets OR 1 bag of pre-crumbled cauliflower rice

  • 2 tsp coconut oil

  • 1 tbsp fresh lime juice

  • 1 tsp honey

  • ⅓ c chopped fresh cilantro

  • ¼ c full fat coconut milk

  • ¾ tsp sea salt

Directions:

If using a full head of cauliflower, pulse it in the food processor until it is ‘riced’. Pick large fragments out and set aside for another use.

Melt the coconut oil in the large skillet. Add the cauliflower rice and cook for 5 min. Add the lime juice, honey, coconut milk and sea salt and cook for 15 minutes until the cauliflower is tender and the liquid has evaporated. Mix in the cilantro just before serving.

Keep in the refrigerator for up to 3 days.

Serving tips:  Cauliflower rice is delicious mixed with stew (like lentil stew or lamb stew) and can be enjoyed all week long.  If you’re hopping on the meal prep train, there’s nothing easier than a low maintenance stew (all you really need is a slow cooker or the ability to leave the stove top on for a few hours).

I approach meal prep like to think about the path of least resistance? Aka how can I create the most delicious foods with the least amount of effort? This is why stew + cauliflower rice = magic.

Top off your bowl with as many veggies as you can - I like to add kale and shredded cabbage that get slightly cooked by the warmth of the bowl and are perfect to complete this meal.
