Tossed Summer Salad w/ Tomatoes and Peaches

 

This tossed summer salad is a walking celebration of summer – it’s when tomatoes, peaches and corn are at their finest, so why not flaunt them and enjoy while in season?

Corn can be a controversial ingredient because it tends to be grown as a GMO in the United States and is inflammatory in nature. Most of the corn produced in the US is used to manufacture High Fructose Corn Syrup and for animal feed (to fatten up cows - because more meat = more $$). If you’re interested in learning more about how corn has infiltrated our food system, I recommend reading the Omnivore’s Dilemma by Michael Pollen.

While I think it’s essential to evaluate and limit our overall consumption of processed corn (corn syrup as a sweetener, corn tortillas / corn chips, etc), I have no qualms about eating corn in its whole form when it’s in season - especially if its grown GMO-free and locally.

Corn in its most natural state is a good source of fiber and really delicious. If you squeeze a little lime juice on your corn before eating, it helps to activate niacin, or vitamin B3, which is essential for optimizing your energy levels.

Ingredients:

  • 2-3 large heirloom tomatoes (or 2-3 cups mixed cherry tomatoes

  • 1x sweet summer peach

  • 1x ear of non-GMO, organic sweet corn

  • 1x lime wedge

  • ½ c – 1 c basil, shredded

  • 1 ½ tbsp belberry lime vinegar

  • Drizzle of extra virgin olive oil

  • Sea salt

  • Cracked black pepper

  • Bibb lettuce

Chop the tomatoes and peach and toss together. Remove kernels from corn (first coat the stalk with lime juice) and add to tomatoes and peaches. Combine the remaining ingredients to taste.
