Blueberry Chia Snack Bars

 

If you're looking for a quick, delicious + healthy power bar recipe, look no further. Even your kids will love them (you're welcome).

For those of you who know me, you'll know how much I love chia seeds and I'm on a mission to figure out how to get them into any recipe. They're high in fiber, boosting your body's detoxification capacity (drink plenty of water to avoid constipation!). These magical little seeds are also a plant-based source of omega 3 fats (not easy to come by). Omega 3s boost your brain health, reduce inflammation and helps create radiant skin. 

HOW TO RECLAIM YOUR HEALTH AND START HEALING YOUR BODY

If you’re ready to cut through the nutrition noise and start making changes to actually heal yourself — follow this guide.

Ingredients:

  • 6 organic dates

  • 1/2 c black chia seeds

  • 2 tbsp coconut oil

  • 1/2 c sugar-free organic blueberries (ex: Bob's Red Mill)

Soak the dates in boiling water for 20 minutes, pit them and pulse through a food processor until it makes a paste.

In a medium bowl combine the date paste, chia seeds, coconut oil and dried blueberries. Mix until it forms a sticky mixture. Roll between two sheets of parchment paper until it's 1/4 inch thick. Set on a cookie sheet and place in the freezer for 15 minutes.

Once hardened, cut them up into mini bars. Keep refrigerated. Enjoy!
